Cool and Crisp Greek Salad
Serves four
Ingredients
3 cucumbers halved seeds removed and sliced
3/4 cup crumbled feta cheese
1/2 cup sliced canned black olives drained
4 Roma tomatoes, quartered
1/3 cup julienne sun dried tomatoes oil only lightly drained off
2/3 cup chopped red onion
4 tbsp Extra Virgin Olive Oil
1 tbsp red wine or balsamic vinegar
1 tsp fresh oregano
Directions
Add all ingredients to a salad bowl and gently toss.
For the dressing, whisk together all ingredients and pour over the salad.
Cover bowl and chill in refrigerator until ready to serve.
